Baby Bitter Melon and Pork Tenderloin |

With Garlic Black Bean Sauce
Serve 2-4
Ingredients:
1 lb. baby bitter melon
5 cups of water and 1 tablespoon salt
1 lb. pork tenderloin cut into a bite size
2 tablespoons vegetable oil
1 tablespoon chopped garlic
½ Red Bell pepper cut to a bite size
½ Onion, slices
1 tablespoon of fermented Chinese black bean
1.5 cup chicken broth
1 tablespoon oyster sauce
Large pinch of sugar
Aloha Shoyu or salt to taste
2/3 tablespoon corn starch combine with 2 tablespoons water
Preparation
~ Cut the bitter melon into quarters from top to bottom and remove the
stem and seed in the center with a knife or spoon. Boil in a hot water
with one tablespoon of salt for about 3 minutes. Remove the melon from
the water and soak or rinse in a clod water to cool down the melon. Set
aside, this will help reduce the bitterness of the melon.
~ On a high heat add vegetable oil into a sauté pan, add pork and sauté
for about 1-2 minutes until the pork is 80% cooked add onion and garlic
cook for 30 seconds.
~ Add bitter melon, black beans and bell pepper sauté for 10 seconds
add chicken stock, oyster sauce and sugar and cook for 2-3 minutes.
(add more chicken stock if need)
~ Add cornstarch to thicken the sauce, perfect with a bowl of steamed rice.
