Sinful & Simple Truffles

  • 1 cup heavy cream
  • 8 ounces bittersweet or unsweetened chocolate,
  • chopped into small pieces
  • ¼ cup unsalted butter, cut into small pieces
  • 2 tablespoons brandy, cognac or liqueur of choice


To prepare the truffle mixture, bring the cream to a boil in a saucepan over a medium heat.  Remove from the heat and add the pieces of chocolate, stirring until melted.  Beat in  the butter and add in the brandy, cognac or liqueur.  Strain into a bowl and chill for 1 hour, until thick

When mixture is ready you may spoon into a pastry shell or chocolate shells.  According to your flavors or essence you can add a garnish to the top of each truffle.


Traditional Gingerbread House


I recommend purchasing a kit either from a local retail shop or from Easter Seals Annual Gingerbread House Fund Raiser.  Shop and gather different candy and edible deco.  Think up a theme and shop for that particular home to be built.  Today we will prepare a replica of Chai's Island Bistro, how appropriate.

Using a traditional house shape for the restaurant and then adding a lanai for outside dining.  Using pretzels for the wrap around fence for that tropical look and then topping off the roof with an array of pretty candy edibles.  Then adding the final touch, Chai's Logo signage and orchids.  The only thing missing is the Brothers Cazimero!
