Pan Seared Duck Taco with Fresh Tomato Mango Salsa
Ingredients:

  • 2 pieces of duck Breast
  • 1 tablespoon vegetable oil
  • 8 pieces of Wonton Skin or Taco shell
  • 2 tablespoons Hoisin Sauce
  • 2 tablespoons chopped Green Onion
  • 4 tablespoons Tomato mango salsa
  • 2 pieced Avocado
  • Dashed of lemon juice
  • ½ tablespoon chopped onion
  • Salt and pepper to taste
  • Vegetable oil for deep-fryer

Preparation

~ Season duck breast both side with salt and pepper then pan sear in a hot pan medium heat with one tablespoon of vegetable oil for about 5 minutes on the skin side and two minutes on the meat side, or until the duck meat cook to medium. Seat aside the let the duck rest for about 5 minutes then slice to thin pieces.

~ Make Guacamole, by combine the avocado with chopped onion, dash of lemon juice, and season with salt and pepper to taste. Set aside

~ Deep fry or bake Taco shell or wonton skins to a golden crisp, set aside.

~ To make taco, add three quarter spoon of Guacamole in to the taco shells, then add duck meat, hoisin sauce, green onions and fresh tomato mango salsa.


Mango Salsa

Ingredients:

  • 2 tablespoon of dices ripe mango (about ¼ inch)
  • 2 tablespoon of dices tomato (about ¼ inch)
  • ½ tablespoon of chopped onion
  • ½ tablespoon of chopped Chinese parsley
  • ¼ tablespoon of lemon juice
  • ¼ tablespoon of Balsamic vinegar
  • ¼ tablespoon sugar
  • A pinch of salt and Tabasco to taste

Preparation:

~To prepare simply mix all the above ingredients together.
